vloopback is way cool. I've used it to build a linux based security system with standard BT878 capture cards. The software I used is called motion(http://motion.sourcefor ge.net). The best thing about it is that you can use it as a sort of multiplexer, each input can be streamed to a separate port. Thus using a single capture card one can stream 4 video inputs realtime.

its real easy to modify a standard $40 BT878 capture card to get 4 video inputs. All BT878 chips have 4 inputs. Most cards only use 3, one for the tuner, one for the S-Video, one for composite. Also the S-video input can be used as a standard composite input, all you have to do is modify the bttv source slightly and recompile. Let me know if you're interested on some tips on how to do all of this. It makes video capture on multiple cameras very cheap.
